Mash at 148F. Boil 90 minutes. Ferment at 66F. Raise to 72F at end. *Note: Don't forget the 2oz. Cascade at end of boil. There were not enough boxes for me to include it in the calculations.

The 2-row malt was from Briess. The Munich and Caramunich malt was from Wyermann. I used pure spring water (the Wal-Mart brand) without any mineral additions. The initial mash pH was 5.3. I then added 1/8 tsp of acid to the sparge water and had a pH during sparge of 5.4. Used 10 gallons of water total for 9 gallons in the kettle pre-boil. SG was 1.047. Boiled about 100 minutes to get 7 gallons at 1.061 SG. Used a Therminator plate chiller for the first time on this batch which worked great (although it takes much longer to clean than the counterflow used to). The End. OG = 1.061 #77

Kegged it on 8/1. FG was 1.010. Tasting notes on 8/4: It turned out pretty nice, came really close to hitting the mark that I was going for, but still isn't quite there yet. Definitely a solid recipe for a robust American IPA, but it came out a bit too bitter and has somewhat of a harsh hop bite. The bitterness lingers on the tongue for a REALLY long time. This is something I like, but I think I took it a little too far this time. I think I need to reduce the bittering hops (and I am starting to wonder if I like Columbus....) and reduce the Chinook dry hop amount. Also contemplating replacing the Crystal at the end with Cascade or Amarillo for a brighter citrus character. I will soon brew the next revision of this.
