Northern German Altbier • All Grain • 10 gal

Dragonsbreath

Make a large (minimum 1/2 gallon) starter 4-5 days before hand, crash chill starter after krausen falls, then rack off liquid and pitch only slurry. Primary fermentation at as close to 58F as you can manage. After kegging or bottling cold condition for 30 days, and you will have a wonderfully clear, beautiful amber Alt, with toasty malt and hop bitterness balanced just so. Dry hopping with 1 oz. Tettnanger gives it another twist as well, with a lovely spicy hop aroma rising from every pour.

    Gives deep aroma and color to dark beers, bocks, stout, alt and schwarzbier.

  • 1.50 oz Northern Brewer - 8.0 AA% pellets; boiled 60 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 2.00 oz Tettnanger - 4.5 AA% pellets; boiled 15 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 1.00 oz Tettnanger - 4.5 AA% pellets; boiled 1 min

  • Wyeast 1007 German Ale™

    Wyeast 1007 German Ale™

    Ferments dry and crisp, leaving a complex but mild flavor. Produces an extremely rocky head and ferments well down to 55F.

Notes

This is one of my favorites,pretty much my house beer. The cold conditioning makes this one as crisp as most lagers.
