Hallertauer Hersbrucker - 3.2 AA% pellets; boiled 60 min

Wyeast 3724 Belgian Saison™
Classic farmhouse ale yeast. Spicy and complex aromatics including bubble gum. Very tart and dry on palate with mild fruit. Finishes crisp and mildly acidic.
Notes
90 Minute boil After one month in the primary (if yeast has settled down) add 12 ounces of pomegranate juice to the secondary, let sit for at least one month, two months worked well. I brewed this in early November 2007 and kegged it in January 2008. Fantastic beer with good Saison flavor from the yeast and just a touch of tart pomegranate flavor.

The addition of the pomegranate juice (at least 1 quart in the secondary) gives a nice tart puckering taste that goes great with the more typical saison flavors. I try and brew this at least twice a year! Always a hit.
