  • 13.82 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1.45 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1.45 lbs Munich Malt

    Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • .73 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • .47 lbs American Victory

    American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • .36 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • .25 lbs Toasted Pale Malt

    Toasted Pale Malt

    Imparts nutty flavor and aroma. Use in IPAs and Scottish ales.

  • .65 oz Magnum - 12.0 AA% pellets; boiled 60 min

    Magnum

    Bred in 1980 at Germany’s Hüll Hop Research Center, this high-alpha variety is renowned for its exceptionally large, heavy cones. Hallertauer Magnum delivers excellent yields and, like many Hüll-developed hops, boasts a strong resistance to disease.

  • .75 oz Centennial - 9.0 AA% pellets; boiled 10 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • .75 oz Cascade - 5.5 AA% pellets; boiled 10 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • .75 oz Centennial - 9.0 AA% pellets; boiled 1 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • .75 oz Cascade - 5.5 AA% pellets; boiled 1 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 tsp Whirlfloc boiled 10 minutes. - (omitted from calculations)

  • Wyeast 1272 American Ale II™

    Wyeast 1272 American Ale II™

    Fruitier and more flocculant than 1056, slightly nutty, soft, clean, slightly tart finish.

Notes

Mash in with 6 gallons strike water. Recirculate at 156F for 15 minutes. Run off wort and do not sparge. Top up boil kettle with water to reach desired pre-boil volume and gravity. Boil 90 minutes. Ferment at 66F. *Note: I experimented with toasting some 2-row in my oven at 350F for 5 minutes. It came out very close to Victory malt so I tossed in 4 oz. of home toasted 2-row in place of 4 oz. of Victory. Also: The American Chocolate Malt is actually Pale Chocolate (200L).

Everything went well. Pitched about 1.5 cups of thick yeast harvested from a previous batch (Blonde Ale). OG = 1.055 #70

This batch turned out pretty tasty and I'm generally happy with it. But, it still feels like it's lacking something. I find myself just wishing it was a more flavorful version of what it currently is. All the flavors are nice and there is nothing unpleasant about it, but if they were a little more vibrant it would be better. I do have to say that putting age on this beer improves it a lot.
