Wyeast 1056 American Ale™
Wyeast 1056 American Ale™
Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
FWH (Substitute the 20 minute hop addition in the first wort runnings) I added .25 of amirillo and cascade at 5 minutes dry hopped with 1/2 oz of cascade and 1/2 oz amirillo in secondary.

This is a smooth and slightly hoppy amber- I mashed at 152 for 90 minutes using 1.5 qt/# of grain- rinse with 170 at 1.5 qt/# If you've never done a first wort hop you should try it. It really adds more to the flavor addition than just the standard flavor boil. I've tried this on the same recipe where it was just a standard addition and I could tell a difference. I'm sold on fwh now.

Looks like this one will have to be worked into the brew schedule for round 2.
