Attempting to clone Turtle Mountain's IPA, which is a local brew pub in my area.

Ingredients (All Grain6.75 gal)

  • 14 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Munich Malt

    Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • .5 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • .25 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 1 oz Columbus - 12.3 AA% pellets; boiled 60 min

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • .5 oz Chinook - 12.5 AA% pellets; boiled 60 min

    Chinook

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 1 oz Centennial - 10.0 AA% pellets; boiled 15 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 oz Cascade - 5.5 AA% whole; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • .5 oz Simcoe® - 11.0 AA% pellets; boiled 5 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 1 oz Cascade - 5.5 AA% pellets; added dry to secondary fermenter

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Centennial - 10.0 AA% pellets; added dry to secondary fermenter

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 oz Columbus - 15.0 AA% pellets; added dry to secondary fermenter

    Columbus

Notes

Just taking a stab in the dark at this recipe. I recently brought home a growler of this IPA and really liked it. As I was drinking it I jotted down this recipe thinking that it might come close to being a clone. Mash at 126F for 15 min. Raise to 149F for 90 min. Boil 60 min. Ferment 66F for 2 days, then 68F for 5 days, then 71F for 1 day. Crash to 50F and keg. Add dry hops to keg for 7 days, then transfer to another keg and carbonate.

Brewed 4/20/08 11:30AM. Used 1 gal tap water 8 gal spring water. Used 1/16 tsp burton salts. OG = 1.065 #61

Kegged it 4/28/08... it's not bad, definitely very hoppy, especially in the flavor. Nice round bitterness. The hop character is a little off what the TMBC is like, though. I think the Simcoe probably doesn't fit. Also, there's just too much hop flavor. Cut out the Simcoe, reduce the aroma hops to 2 oz total. Not totally sure if Columbus is good for aroma either... but I do think there's something other than just cent/cascade going on. The alcohol is also pretty high on this and should be reduced quite a bit so that it has a cleaner flavor. It needs to be more drinkable. Color is also slightly too light.

Update: As the beer clears the color is more in line with what I intended. It's also more drinkable and the hop flavor is really enjoyable. Aroma is a bit lacking, but I haven't dry hopped it yet. That should take care of the aroma. Going to dry hop with .5 oz Amar, Casc, Cent. instead of what is in the recipe.
