Ingredients (All Grain5.5 gal)

  • 10 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1.25 lbs German Light Munich

    German Light Munich

    For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

  • .25 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 1 oz Centennial - 9.0 AA% whole; boiled 60 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • .5 oz Cascade - 6.8 AA% pellets; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • .5 oz Cascade - 6.8 AA% pellets; boiled 5 min

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Brewed 3/31/08 with wyeast 1098. Mash at 152. O.G. 1.054. Into secondary 4/13 at 1.012. Bottled 4/24. Second brewing with wyeast 1056. Brewed 6/16. O.G. 1.056. Brewed 3/30/09 with Wyeast 1056. O.G. 1.062. Ferment at 64 degrees. 90 seconds oxygen. Substituted 10lb maris otter 2L for 10.5 2 row. Into 2nd at 1.012 4/13/09. Into keg at 4/20/09. Ready to drink by 5/5 (2 more weeks).

This is by far the best beer I have brewed yet, after about 9 batches. I may have to brew this one with different yeasts.

Fantastic again

This beer is so delicious. It is a light pale ale, with some caramel sweetness which rolls over to a hop finish. It has a medium body and is balanced between sweet and dry. Definately a session beer. Hop bittering is about right, but flavor is a little strong. We shall see how it ages, or maybe add less flavor hops next time. Fresh, it is leaning toward IPA in flavor, although, that really is not a bad thing and it is delicious as is. Update: after a few weeks the hops started to die down and it was more to style.
