Taken out of the Beer Captured book. Mashed 25 minutes at 125*F and 60 minutes at 150*F. Reused the Mexican Lager yeast cake from 2 previous batches. Pitched 1.25 quarts of slurry at 63*F.

  • 8.51 lbs German 2-row Pils

    German 2-row Pils

  • 1.12 lbs Belgian Caramunich

    German Dark Munich

    Enhances body and aroma. Stout, schwarzbier, brown ale, dark and amber ales.

  • 0.20 lbs English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • 0.51 lbs Barley Flaked

    Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • 0.8 oz Tettnanger - 2.5 AA% pellets; boiled 60 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 0.4 oz Northern Brewer - 8.0 AA% whole; boiled 60 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.
