My version of the tropical type of this style.

Ingredients (All Grain, 5 gal)

Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

Notes
I actually use 0.50# each of 80L and 120L Crystal malt in place of the 90L listed in the recipe. Total boil time is about 75 minutes. Add the Irish Moss about 25 minutes before the end of the boil.

My version of the tropical type of this style.

2/23/10: It turned out pretty well. It was a bit more bitter than I had expected at first, but after aging for 6-8 months was starting to get very good. I haven't tried any for almost a year now, but I still have a few bottles so I may sample it again soon.
