Notes
Mash at 150F for 90 minutes. Boil 90 minutes. Ferment at 67F. Add dry hops after about 5 days. *Note: The final additions of Centennial and Simcoe were done with a HopBack.

Yep, brewed it this past weekend. It's still fermenting. Should be another week or two before I get to taste it.

Kegged it and sampled it. Tastes freaking awesome, just as I hoped it would. Massive citrus hop aroma and flavor dominate the beer and it finishes dry with a warming alcohol feeling and a nice solid bitterness which is not too sharp. Malt is subdued, as it should be in this style, but strong enough to support the hops. Very balanced and easy to drink.

This beer won 1st place in the IPA category with an overall score of 44 at the Enchanted Brewing Challenge in Albuquerque, NM sponsored by the Dukes of Ale. The judges commented mostly on the complex citrus aromas and flavors, finding notes of pine, mango, orange peel, tangerine, and pineapple. They also commented on how well the alcohol was hidden and how balanced and drinkable it was. Needless to say, I was quite pleased with this reaction.

Brewed it again and substituted 2lbs of the base grain with Pilsner malt in order to achieve more complete sugar conversion and thus a drier beer. Also used 1lb. Turbinado sugar in place of 1lb. of the cane sugar and added an additional .5 oz Simcoe and .5 oz Chinook as mash hops. Mashed at 149F for about 45 minutes (while recirculating the mash). OG = 1.080 #75
Crazy Attenuation

7/28/08 - Update. Kegged it last night. Turned out great, just like the first batch but perhaps a little more drinkable. Doesn't weigh you down at all despite the ridiculously huge hop explosion taking place on every level of this beer. I've had 3 pints tonight and I'm still thirsty for more. This is kind of crazy: According to the Excel chart that you can download from morebeer.com which allows you to measure FG with a refractometer, this beer finished at 1.003!! Inital reading: 20 Brix Final reading: 8.2 Brix Perhaps the calculations in the spreadsheet are wrong... this seems incredibly low for a finishing gravity... BUT, that is exactly what I was going for with this recipe, so I was expecting a pretty low FG... just not THAT low! In any case, the beer is balanced wonderfully. Maybe someday I will actually get to taste the real Pliny The Elder! haha...
Hydrometer

OK, I took a hydrometer reading tonight after decarbonating a sample and it read 1.007. Much closer to what I originally expected. I took another reading with the refractometer and it still read 8.2 Brix so I don't know what the deal is with the conversion for this. Perhaps the formula for determining FG with starting and finishing refractometer readings isn't as exact as we may think.

Brewed it again to enter into the AHA Club-Only Comeptition for "Imperial Anything". #86 I finally got a few bottles of Pliny The Elder to compare and I have to say this batch turned out VERY close to Pliny. It does take about 1 month of cold conditioning before it really starts to shine though.

Brewed this again on 12/20. I adjusted the recipe a bit. Here's what I brewed this time: 7 gallon batch 1.080 OG 260 IBU Mash temp: 149F 77% American 2-Row 10% Pilsner Malt 2.5% Wheat Malt 2.5% Crystal 40 8% Turbinado Sugar .5 oz. Chinook FWH .5 oz. Simcoe FWH 2 oz. Warrior 90 min. 1 oz. Chinook 90 min. 1 oz. Simcoe 45 min. 1 oz. Columbus 30 min. 1 oz. Centennial 0 min 1.5 oz. Centennial in HopBack 1 oz. Simcoe in Hopback 1 Whirlfloc tablet .5 tsp Wyeast Nutrient .5 tsp foam control 300 billion cells of Wyeast 1272 American Ale II For the dry hop I'm going to try a double dry hop method. The first batch of hops will be added to the primary after fermentation is complete and kept between 70F-75F: 2.5 oz. Columbus 1.5 oz. Centennial 1.5 oz. Simcoe After 1 week I will rack the beer off the hops & yeast into a secondary for another 1 week at 70F-75F with these hops: 2 oz. Columbus 1 oz. Centennial 1 oz. Simcoe Yeah, that's a lot of hops.... Cheers!

Hey Joe , I think this may be my next brew. Of the two which turned out better? Or do you have an even better one? This will be my first all grain Extreem IPA

This was my first all grain brew and it's absolutely fantastic. I put it side by side to a Pliny and it comes pretty close. I'll be tweaking this with a little more citrus in the future but is brilliant as is. Thanks for the post. P.S. I brewed the original recipe but used Turbinado sugar.
