  • 12.25 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • .5 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • .5 lbs Belgian Biscuit

    Belgian Biscuit

    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

  • .5 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .37 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 2 oz Challenger - 6.3 AA% pellets; boiled 60 min

    Challenger

    Popular bittering hop used primarily in British ales and lagers. Mild to moderate aroma, but quite spicy.

  • 1.5 oz Fuggle - 5.0 AA% pellets; boiled 10 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1 oz East Kent Goldings - 4.6 AA% pellets; boiled 1 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1 oz East Kent Goldings - 4.6 AA% pellets; boiled 0 min

  • 1 tsp Whirlfloc boiled 10 minutes. - (omitted from calculations)

    Wyeast 1028 London Ale™

    Rich with a dry finish, minerally profile, bold and crisp, with some fruitiness.

Notes

Mash at 152F for 60 minutes. Boil 60 minutes. Ferment at 68F. The final addition of Goldings is added with a Hopback.

Very smooth brew session for this one. Hit the gravity on the nose and the Hopback worked great. Pitched a very active 3 liter starter and had activity within 2 hours. It's currently firing brown blobs out the blow off tube. #47

This one turned out pretty good. It's another style I don't know very well though and I have a hard time evaluating it. There are no problems or flaws that I can detect, but there is still something unremarkable about the brew. Perhaps this is how English IPAs are supposed to taste, but it just doesn't jump with flavor like I thought it would. That's not to say it isn't good, though. The malt profile is really nice, with some bready, biscuity, toasty flavors. And the hops seem to be balanced well with some spicy and floral characters. There's also an underlying malty sweetness and another sweetness that I think is coming from the hops. This flavor is similar to black licorice. It's subtle, but it's there. The bitterness is much less than what I would have expected or wanted. Not a bad beer, but nothing amazing either. It will be interesting to see how it matures after some time in the keg.
