Ingredients (All Grain7 gal)

  • 11.75 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1.5 lbs American Munich

    American Munich

    Munich Dunkels. Adds color/nutty flavor. Sometimes called Aromatic.

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .75 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • .5 lbs American Black Patent

    American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • 1.75 oz East Kent Goldings - 5.9 AA% pellets; boiled 60 min

    East Kent Goldings

    Mild, slightly flowery.

  • .75 oz Fuggle - 4.9 AA% pellets; boiled 10 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • .75 oz East Kent Goldings - 5.9 AA% pellets; boiled 1 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1 tsp Whirlfloc boiled 10 minutes. - (omitted from calculations)

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Mash at 153F for 60 minutes. Boil 60 minutes. Ferment at 67F.

First batch brewed using a new grain mill (the Barley Crusher). I guess I tightened the rollers a little too much and almost had a stuck sparge. 1lb. of rice hulls took care of it though, and everything turned out great. OG = 1.062 #46

This took 3rd place in my club-only competition on 3/4/08 with an overall score of 28. I feel that it turned out pretty good, but there is something in the aroma that is not quite pleasing. Sort of a "dusty" character. I am wondering if it is related to the highly crushed grain.

As I suspected, putting a little age on this brew has made a huge difference. It's really starting to kick ass now.

Competition results

This beer took 1st place in the Porter category with an overall score of 38 in the Enchanted Brewing Challenge (sponsored by the Dukes of Ale). The judges commented on the up front roastyness and background malt sweetness. They said it was an excellent example of the style which got better as it warmed up a bit. One of the judges wanted more roast and more hop character.

Opened one tonight. It's been in the bottle 2 years and has held up wonderfully. The chocolate and coffee characters are completely blooming now. I'm really impressed at how well this beer stood up over time. I'm also very happy to see that my bottling practices are adequate!
