Ingredients (All Grain5 gal)

  • 13.0 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .50 lbs English Amber Malt

    English Amber Malt

    Roasted malt used in British milds, old ales, brown ales, nut brown ales.

  • 0.75 oz Warrior® - 16.0 AA% pellets; boiled 60 min

    Warrior®

    New hop with much potential. Very stable.

  • .33 oz Simcoe® - 13.0 AA% pellets; boiled 35 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • .75 oz Willamette - 5.0 AA% pellets; boiled 25 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • .5 oz Millenium - 5.5 AA% pellets; added dry to secondary fermenter

    Millenium

    Very new hop. Primarily used for alpha potential.

  • .5 oz Sterling - 13.0 AA% pellets; added dry to secondary fermenter

    Sterling

    Perceived to be similar to a Saaz and Mt. Hood combination. Finding favor as a Saaz replacement.

  • .5 oz Glacier - 8.5 AA% pellets; added dry to secondary fermenter

    Glacier

    An excellent new variety with balanced bittering properties combined with a good aroma profile.

  • Wyeast 1187 Ringwood Ale™

    Wyeast 1187 Ringwood Ale™

    Notorious Yeast of European origin with unique fermentation and flavor charateristics. Distinct fruit ester and high flocculation provide a malty complex profile, which clears well. Thorough diacetyl rest is recommended after fermentation is complete.

Notes

Mash In at 152° for 60 min - sparge as usual Boil time : 60 min. Cool and ferment at 71° to 74° 3/4 oz. - Warrior - 60 to 35 min. continuous* 1/3 oz. - Simcoe - 35 to 25 min. continuous* 3/4 oz. - Palisade - 25 to 0 min. continuous* 1/2 oz. - Amarillo - dry hop 1/2 oz. - Simcoe - dry hop 1/2 oz. - Glacier - dry hop Continuous Hopping - Dogfish Head uses a device to slowly add a measured amount of hops over time into the boil rather then addin the whole addition at once. This is a good brew to have a buddy handy to toss in the hops, pre-measured in their own dish, throughout the boil. It is a good technique and the commercial example of this beer is one of my very favorite IPAs. This Recipe Appeared in the March-April 2006 edition of BYO Magazine
