After making the first batch, I would omit the addition of the honey as the sugars raised the alcohol content. I would consider changing some of the specialty grains to get a more caramel color and flavor to the beer.

Ingredients (Extract5 gal)

  • 0.5 lbs Belgian Caravienne

    Belgian Caravienne

    Belgian light crystal malt. Used in lighter Abbey or Trappist style ales.

  • 0.5 lbs American Caramel 40°L

  • 6 lbs Liquid Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 lbs Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Cascade - 6.0 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • 0.5 oz Cascade - 7.3 AA% pellets; boiled 2 min
