Something I came up with in an attempt to make a hoppy IPA but with some unusual hops.

Ingredients (All Grain6 gal)

  • 13.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .9 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • .9 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .45 lbs Munich Malt

    Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • .45 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1 oz Nugget - 13.0 AA% pellets; boiled 60 min

    Nugget

    This is very bitter and often used in medium to dark ales and lagers. Aroma is quite heavy and herbal.

  • 2 oz Warrior® - 16.0 AA% pellets; boiled 15 min

    Warrior®

    New hop with much potential. Very stable.

  • 2 oz Simcoe® - 13.0 AA% pellets; boiled 5 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 2 oz Newport - 15.2 AA% pellets; boiled 1 min

    Newport

    Viewed as a high-bittering alpha hop.

  • 1 oz Pride of Ringwood - 8.5 AA% pellets; boiled 0 min

    Pride of Ringwood

    Moderate.

  • 2 oz Columbus - 15.0 AA% pellets; added dry to primary fermenter

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • 1.5 oz Nugget hops added to the mash. - (omitted from calculations)

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Mash at 154 for 60 minutes. Recirculate for 20 minutes. Batch sparge with 2.5gal twice. Recirculate each sparge for 15 minutes. Boil 90 minutes. Add final addition of Pride Of Ringwood with Hopback. Chill & ferment at 67 deg. Add dry hops after 7 days. Keg or bottle after 7 additional days. **Don't forget the 1.5 oz. of Nugget added to the mash. Also: the Crystal 20 is actually Crystal 15. Why is there no option for Crystal 15 in the database?

First brew of the new year. Everything went smoothly. The wort had a really awesome hoppy smell at the end of the boil. OG = 1.069 #36

Well, I kegged it tonight and it didn't turn out so hot. The flavors just aren't very prominent. There is a bit of a bitter kick and some weird hop aromas, but it's not very enjoyable. Oh well, it was an experiment and I'll try again some day with something different! (I didn't bother with the dry hops, btw.)

Well well, isn't this interesting. I tasted the beer again tonight after it had a day to sit in the keg and it tastes MUCH better. Gone are the weird soapy flavors it seemed to have before and gone is the weird almost sour aroma coming from it. What I'm left with now is a pretty light bodied and refreshing brew that isn't too bitter and has some really subtle yet complex hop character. The hops are very much more subdued that I expected from this recipe. The bitterness is also much lower than I predicted. It is almost more like an American Pale Ale. The color is right, the bitterness seems right, and the hop aroma/flavor is a little piney and even a little citrusy (which I did not expect) and a touch floral. I think that in a few days the flavors and aromas should come out a bit more and I can analyze it further. I'm not giving up on this yet :) More tasting notes: I'm drinking one now and I'll be damned if there isn't an actual "fragrant earth" aroma coming from this beer! I had to take a few deep inhalations before I really was sure but it's definitely there. This is amazing. This was the very aroma I was shooting for when I designed this hopping schedule. It's got hints of woody, mossy, piney, and slightly sweet aromas all melded together. haha.. I'm really amazed right now. As for the flavor, it is very different from the aroma. There isn't any of the "earthy" character, but rather the light citrusy character which is more like an orange or a lemon than a grapefruit. I'm not sure what hop I could have gotten this from, since none of the ones I used are supposed to be citrusy. Perhaps the Warrior? I haven't seen a whole lot of data about the flavors Warrior contributes. Was kinda just experimenting by using it as a flavor addition. It finishes nice and clean with much less bitterness than I expected. Perhaps there is still enough to consider it an IPA, but for my tastes I would prefer significantly more of a bitter kick at the end. It is also extremely dry. I'm really amazed at how light and unobtrusive the hop characters are in this beer. I kind of expected something that would be a bit more of an assault on your tastebuds, but this is a very refreshing and full-flavored yet non intrusive beer. Stay tuned for further updates!
