Jillian's love and hope ale Amour et Espoir par Jillian This is very close to a Beire de Noel, it should be aged well by Christmas 2007! mash 1 hour 150F, lauter with 160F. 90 minute boil. 1 super tiny pinch of rosemary and sweet gale in last 5 minutes of boil. 1 ounce oak chips in secondary. Planning to ferment cool, about 66-68F to reduce ester. Ingredients picked out by my 7 year old daughter, Jillian.
