This is Jamil's recipe for a malty Schwarzbier. I scaled it a little to match my efficiency.

Brewed this on Sunday 11/11/07. This was my 2nd attempt at a Lager. Everything went well with the brew, except that I forgot to adjust the hop additions to account for the actual AA of my hops, which were much lower than what Jamil used when he formulated this. Therefore, I ended up with about half the IBUs that I should have had. Hopefully this won't be a big deal though, since this is a very malt focused beer. I pitched a very large starter of WLP833 yeast at 9PM on 11/11/07. I grew up this particular starter 3 separate times with about 1.5L of starter wort each time. OG = 1.050 As of 6PM 11/12/07 it was fermenting heavily and looking/smelling great. #27

Tossed this one into a keg tonight because I "felt" that it was time. Turns out I was right. This beer tastes really great. It's extraordinarily clean and crisp. The color is also very clear and clean, although quite dark. The malty flavors in this beer come through very nicely and they are quite complex. The roasty character is noticed first and this is followed by a toffee candy-like flavor which gives the illusion of sweetness, although it is not. There is also a background maltyness which I cannot quite explain but gives a rich "fullness" to the character. The hops give a nice pleasant and mild aroma which fits very well. There is only very slight bitterness, which is what I expected. I originally thought I screwed up by not compensating for the low AA of the hops I have but this beer turned out great, and I don't know that I would have wanted it to be more bitter (although doing so may have kept it closer to the style guidelines). All in all, a very solid brew which I can't wait to sample after it has had a little time to smooth out in the keg and get to the right level of carbonation. I'm sure this will bring out the flavors and aromatics a bit more. FG = 1.012

Wow, now that it has proper carbonation the flavors are all smoothed out and melded together wonderfully. This beer is tasting incredible right now!

Yeah, this beer is excellent. It just keeps improving as time goes on. I cranked up the carbonation a little higher and it turned out great. It now has almost a "creamy" texture with all the bubbles and it is a joy to drink. It has a very solid malty character which comes through in the aroma and in the flavor. There is a slight note of roastyness in the background - just enough to give it a distinct character. One would probably expect more of a roasty flavor in this beer because it is so dark (looks black unless held up to the light and then you can see some redness coming through) but the flavor is more of the Munich malt - slightly sweet and very smooth. I bought a pack of Sam Adams Black Lager tonight because this is supposedly a good commercial example of the style and I compared it side by side with my beer. They are remarkably similar. I can honestly say that I enjoy mine more than the Sam Adams. Mine is more malt-focused and has more malt flavor overall. Theirs has a noticeable hop aroma which is a little unpleasant in my opinion. I think theirs also has a bit more Caramel and roasty malt flavor. But apart from these subtle differences they are almost exactly the same beer. Drinking them together is a very interesting experience! If you like the Sam Adams Black Lager then you'll probably like this recipe. Cheers :)
