Ingredients (All Grain10 gal)

  • 2 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 2 lbs American Caramel 60°L

    American Caramel 60°L

    Mild caramel,nutty flavor, sweet. adds color

  • 14 lbs Belgian Pale

    Belgian Pale

    Fully modified and is easily converted.

  • 3 lbs Belgian Munich

    Belgian Munich

    Used to increase malt aroma and body with slightly more color.

  • .5 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • .5 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 oz Galena - 13.1 AA% pellets; boiled 60 min

    Galena

    Neutral. This hop can be very bitter, but blends well with finishing hops. Used in American ales and lagers, but suitable for all beer styles. Aroma is medium but pleasant.

  • 1.5 oz Cascade - 6.0 AA% whole; boiled 20 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Cascade - 6.0 AA% whole; boiled 10 min

  • 1 oz Amarillo® - 8.9 AA% pellets; boiled 1 min

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 1 oz Cascade - 5.5 AA% whole; added dry to secondary fermenter

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 2 tsp Irish Moss - (omitted from calculations)

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Single step infusion mash at 152F for 60 mins. Charge the mash tun with hot water and strike 7.5 gals at 162F to settle at 152F. After 60 mins and starch test, second batch strike 7.5 gal at 175F to mash out at 170F 90 min boil. Notes: O.G: 1.055 F.G.: Mash temp was on the high side, so interested to see the body. Dry hopped 1 oz total into the primary 6 days after brewing.

One of my favorites batches

I never got around to tasting side by side with Redtail, so I don't know how good of a clone this was. But it was a great american amber. Hop to malt ratio was perfect and there was just enough crystal malt sweetness. Great head on it and enough body while remaining refreshing.
