Wyeast 1056 American Ale™
Wyeast 1056 American Ale™
Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Mash at 149F for 90 minutes. Boil 60 minutes. Ferment at 67F. A random recipe for a Blonde Ale cooked up while chatting at work. Hoping for a beer that is dry and somewhat malty with a bunch of citrus hop character in the finish. Nice yellow color and a touch of bitterness.

Brewed 11/3/07

Brewed it up yesterday. Mashed at 149. Boiled for 75 minutes. Chilled with counterflow chiller. Did not use hopback. Forgot to add the damn whirlfloc. Not a big deal, but I was hoping to really get a nice clear bright yellow beer from this recipe. Pitched a starter of 1056 at 3PM 11/3/07. It's fermenting nicely as of 5PM 11/4/07. #25
Kegged 11/12/07

Finally got myself some kegs and this became my first kegged batch. Everything went great (except for a minor overflow of beer toward the very end of siphoning). Final gravity came in at 1.009 - just what I was hoping for. I also drank about 1/2 pint of this bright yellow beer and enjoyed every sip. It has a great dry character while retaining a rich malty background. Mouthfeel is just right - very present but dissipates quickly and finishes clean and crisp. The hops come through very nicely with a hint of orange and lemon citrus. Very refreshing. No noticeable bitterness, just a slight hint to balance things out.

The first batch of this was so tasty and went so fast that I brewed it again today. I remembered the whirlfloc this time and I omitted the Crystal hops (and upped the final addition of Ahtanum to a full ounce). I also used WLP001 instead of Wyeast 1056. No particular reason for this other than what I had on hand at the time. OG = 1.050 #40
Kegged the 2nd batch tonight

and it turned out great. It's hard for me to remember exactly what the first batch tasted like, but I think it turned out very close (which is what I was hoping for). Has a nice soft biscuit malt flavor coming through and a light bitterness that you feel more in the center of your tongue instead of the back. Very pleased with this one.
Update 3/2/10

Opened a bottle of this batch #40 tonight over 2 years after brewing it and was blown away at how well it has held up. No oxidation, no contamination, just pure clean malt and that same light bitterness. Very very tasty beer even after being in the bottle for 2 years.
