Ingredients (Extract5.0 gal)

  • 0.20 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 0.75 lbs English Wheat Malt

    English Wheat Malt

    Light flavor, creamy head. For wheat beers, stouts, doppelbocks and alt beers.

  • 6 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 oz Fuggle - 4.5 AA% whole; boiled 60 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • .5 oz Tettnanger - 4.9 AA% pellets; boiled 30 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • .25 oz Cascade - 6.5 AA% whole; boiled 1 min

    Spicy with citrus notes. Slightly grapefruity.

  • 3.3 lb Apricot Puree - (omitted from calculations)

    White Labs WLP715 Champagne

    Classic yeast, used to produce champagne, cider, dry meads, dry wines, or to fully attenuate barley wines/ strong ales. Can tolerate alcohol concentrations up to 17%. Neutral.

Notes

Add apricot puree to secondary fermenter. Allow about 5 days in secondary fermenter. Prime with 3/4 cup priming sugar. Recipe from Brew Your Own Beer, Summer 2001. Steep grains at 152F for 45 minutes. Can substitute 3oz apricot liquid extract flavoring in secondary in place or puree. I eafed the Fuggle load up to 1oz from BYOB's 2/3 oz to get it within the IBU range for American pale ale.
