  • 8 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1.5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • .5 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • .5 lbs American Caramel 90°L

    American Caramel 90°L

    Mild caramel,nutty flavor, sweet. adds color(Red Ale)

  • .5 oz Glacier - 7.0 AA% whole; boiled 60 min

    Glacier

    An excellent new variety with balanced bittering properties combined with a good aroma profile.

  • 1 oz Centennial - 9.0 AA% whole; boiled 10 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Mashed at ~152 for 60 minutes -------------------------- Batch sparged with 2 gallons and 1.5 gallons. After boil, yielded just over 5 gallons of 1.050 wort (~70% efficiency) ------------------- Racked to secondary after 1 week, gravity 1.012. Added 1 oz centennial hops to dry hop. Good brown taste, still tastes green. Bubbling 1 every 20-30 seconds in secondary. ------------------------- Tasted after 1 week in secondary. Gravity 1.011, no bubbles after ~2 minutes of watching (probably done fermenting). Still young (obviously) but very tasty already! Strong hop aroma and initial taste, with a very nice nutty/light caramel aftertaste. Nice brown/dark red color. ------------------------- Bottled after 11 days in secondary, primed with 5 oz dextrose. Final gravity 1.010. Very tasty, a bit light on the mouthfeel, but good. ------------------------- Cracked one after 12 days in the bottle. Awesome hop aroma and flavor, but a great brown nutty aftertaste. Carbonation still a bit low, which should add to the mouthfeel as well (still a bit light). Will try another one in a week.
