Ingredients (All Grain5 gal)

  • 6.5 lbs American Vienna

    American Vienna

    Increases malty flavor, provides balance. Use in Vienna, Märzen and Oktoberfest.

  • 1 lbs American Victory

    American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • .5 lbs American Munich

    American Munich

    Munich Dunkels. Adds color/nutty flavor. Sometimes called Aromatic.

  • 3.5 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 2 oz Tettnanger - 4.5 AA% pellets; boiled 90 min

    Mild, slightly spicy. 'Noble'.

  • 1 oz Mt. Hood - 5.0 AA% pellets; boiled 21 min

Notes

- use Briess 6-row interpretations of European malts and American interpretations of German hops - either use Victroy malt or toast the Vienna 350 deg F 30 min - use thick high-temp infusion mash to stand up to the thinness of the honey - boil honey for a full 90 min to drive off all the flavors you would ohterwise have to age out - use 1056 Chico yeast - 70 deg F/ 14 days primary/ 14+ days secondary/ 14+ days bottle

Too much honey.

This was a little too boozy. It got in the way of the maltiness I really wanted. Boiling the honey the full 90 min. did clean it up well. The honey flavor was there without being over powering. Next time, 1.5 lbs. honey will probably do. The flavor hop addition will have to go. Finally, the ratio of vienna to munich malts should be more like 4# vienna and 3# munich.
