I was pleased as punch with this. A bit darker than SNPA, but the fresh Cascade hope aroma and flavor were brilliant!

  • 9 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 7 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs Crystal Malt 60°L

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

All grain Recipe for 10 gallons. Batch Sparge. Mash Temp = 152F Grain Weight = 19 lbs. Sparge Temp = 170F Strike Temp = 162F (mash temp + 10F) Initial Mash Liquor Vol = 6.5 gal (grain weight * 1.375 qts/lb) Sparge Strike = 175F (sparge temp + 5F) Mash in and rest for 1 hour. Stir occasionally. Heat second batch of liquor to sparge temp. Check pH (5.0-5.5, with .2 drop at mash temps). Test for starch conversion using iodine. Lauter and recirculate about 1 qt until the wort runs clear. Then lauter all of the wort and add to the boiling kettle. About 1 quart/minute. Pour in the sparge water into the cooler and mash for 5 mins. Then recirculate as before and lauter and add to the brew kettle for total volume of 12 gals. Begin 90 min boil. Chill with immersion chiller. Rack to fermenter and filter out trub. Aerate with air stone. Pitch yeast. Ferment at 65F for 3-4 days or until fermentation is done. Secondary for 1 week. will brew this again for sure

It was perfect in the summer. Drinking it fresh, it tasted much more pungent than SNPA. But after 1 month in the bottle the hop pungency was quite a but more mellow. The Perle and Cascades are definitely the right hops for this beer.
