Ingredients (All Grain5 gal)

  • 7 lbs German 2-row Pils

  • 1 lbs German Light Munich

    For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

  • 1 lbs German Wheat Malt Light

    German Wheat Malt Light

    Typical top fermented aroma, produces superb wheat beers.

  • .5 oz Perle - 6.7 AA% pellets; boiled 60 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • .5 oz Saaz - 3.0 AA% pellets; boiled 30 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • .5 oz Saaz - 3.0 AA% pellets; boiled 15 min

  • 1 tsp Irsh Moss boiled 15 minutes - (omitted from calculations)

  • Wyeast 2565 Kolsch

    Wyeast 2565 Kolsch

    A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.

Notes

Mash 122 degrees F for 20 min, then 148 degrees for 60 min. in soft water. Ferment at 60 degrees F. Use clarifying agent at end of secondary fermentation. Cold conditioning at 35 degrees F for 4 weeks is optional.

This can be enjoyed by a diverse group of people.

My wife, who is also my toughest critic, says that this is the best beer I have brewed. Everyone who has tried it has enjoyed it. The cold conditioning made this a very clean tasting Kolsch.
