I seem to have a quest to make a nice "Standard Beer". This is attempt #2.

Ingredients (All Grain, 6 gal)

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

Belgian Aromatic
Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

Crystal Malt 40°L
Crystal Malt 40°L
Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

Perle - 8.2 AA% pellets; boiled 60 min
Perle
Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

Ahtanum® - 6.0 AA% pellets; boiled 15 min
Ahtanum®
Good for lagers, american ales, Floral. citrus, sharp and piney.
- 1 oz
Centennial - 10.0 AA% pellets; boiled 5 min
Centennial
Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

Cascade - 5.5 AA% pellets; added dry to secondary fermenter

Spicy with citrus notes. Slightly grapefruity.

Some fruity esters, attenuative, fair to good reputation.
Notes
Mash at 154F for 60 minutes. Boil 60 minutes. Ferment at 67F. This was my first all-grain brew. Also my first time keeping it real simple. As you can see, the gravity is a bit low. I didn't anticipate getting such low efficiency and would have increased the base malt if I had known. But it was my first all-grain brew, so live and learn!

Brewed it. Wanted to use Wyeast 2565, but the smack pack never expanded. So, I pitched Cooper's dry yeast at 11:30PM. 8/5/07 10AM it is fermenting heavily. Gravity reading came out low 1.038. Probably due to all the uncrushed grain I noticed in the bag from my local brew store. So, I reduced the mash efficiency on here so my gravity would match. Hope this turns out ok, seems like it isn't going to be as strong as I would like. #9

Racked to secondary. Used Cascade hop tablet. First taste is pretty good, but a little weak on the alcohol, which I expected. Should be better with some carbonation and age. Looking to be a nice "standard beer". Or more like a light beer actually.

This brew has a very malty flavor that really stands out above everything. It has a great flavor but definitely tastes a little watery which I'm sure is due to the low OG. This could easily be corrected in the future by increasing the malt a little and this would a really solid beer. It's currently very drinkable, but the watery nature does tend to detract from the enjoyment of it. I might also use different/more hops so that they stand out a little more, as the only thing I can really smell or taste is the malt.

Knowing how much better this beer could have been makes it really hard to enjoy. Instead of focusing on its good qualities I only notice the things that are wrong with it, mainly the watery nature. It tastes like it doesn't even have alcohol in it. It makes me think of "grain water" when I drink it. Now that it is carbonated it's a little better, but still hard to enjoy knowing that I could have made it a lot better. I'm kind of tempted to dump this one out in order to reclaim some bottles and brew it again without messing it up.

Well, I have to say I am now surprised by how this beer has aged. I did not dump it out and I'm glad I didn't. I just drank a couple of them and it has become quite enjoyable. It is very carbonated now which really improves the character of the beer. The malt flavor stands out a lot more now and I have also just recently noticed a really nice mild hop aroma which seems like it is coming from the Cascade dry hops. Nice beer to drink after work with low alcohol and low calories, but high flavor. What a pleasant surprise!
