3.5 lbs. of the Marris Otter will be smoked for 45 mi. with cherry hardwood. Multi-step mash infusion. The cherries will be fresh and pitted, held in water at 150 degrees for 25-30 min. Dark brown sugar & honey will be added at beginning of first boil. Cherries will be added the last 15 min of boil and remain during primary, removed when racked to the secondary. I will update in a few months the results.

We ended up adding 2.5 lbs. fresh cherries after the boil when the temp. dropped to 180 via the wort chiller. I removed them three days after going to the primary. We smoked 2 lbs. of the grain with cherry wood for 30 min. The smell is present but not overwhelming. Mashing schedule was. 130 for 30 min. 150 for 60 min. raised to 158 for 15 min. and then sparged to 170. Everything went fine, and the smell from the primary crock is well......heavenly! A wee bit o' smoke with very subtle cherry.....
