Funky Chunky Monk-ey

Belgian Golden Strong Ale • All Grain • 5 gal

Mile High Monks

This saying must be chanted while brewing: "Oh, how I love thee, the Funky Chunky Monkey. Oh, you have saved me, from much stress and agony. Oh, on this day I make thee, in several months you will make me happy. Oh, how I love thee, the Funky Chunky Monkey."

  • 6 lbs American 2-row

    American 2-row

  • 1 lbs Candi Sugar Dark

    Candi Sugar Dark

Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 lbs Honey

    Honey

Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Hallertau - 4.0 AA% whole; boiled 60 min

Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 1 oz Saaz - 3.0 AA% whole; boiled 10 min

    Saaz

Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • Wyeast 1024 Belgian Ale

    Wyeast 1024 Belgian Ale

Banana-estery. Clove-like phenolics. Intended for abbey beers.

Notes

The name says it all, it's like a variety of Ben and Jerry's ice cream. Funky-because of the belgian yeast, chunky- because it is full of all the best ingredients and plenty of alcohol, and mon-key- because monks made it and it's the key to inner peace and wisdom.
