Ingredients (All Grain2 gal)

  • 1.5 lbs German 2-row Pils

    German 2-row Pils

  • 1 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • 0.25 lbs Acidulated Malt

    Acidulated Malt

    High lactic acid. For lambics, sour mash beers, Irish stout, pilsners and wheats.

  • 3/8 oz Hallertau - 4.5 AA% pellets; boiled 15 min

    Hallertau

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • Wyeast 1007 German Ale™

    Wyeast 1007 German Ale™

    Ferments dry and crisp, leaving a complex but mild flavor. Produces an extremely rocky head and ferments well down to 55F.

first all-grain

Well, this beer is my first all-grain experience. Mashing was interesting in my kitchen pots, but I got my 60% efficiency, which is pretty good considering the crappy techniques involved. The color looks pretty dark right now, but maybe it will get lighter? OG = 1.031 Attempting to sour overnight using raw cracked malt. We'll see how that goes. Boiling tomorrow regardless.

Souring seems to have worked. I let it run for 21 hours before boiling and adding hops. Fermentation is done now and I'll bottle this weekend.

Came out not too bad. Very light, a little sour tang, easy and refreshing. When it gets warm, there is a little "rotten grain" aftertaste, but it's good when cold.

planning a second batch

This one turned into my wife's favorite beer. She even likes it better than the honey pale I make for her and won't let me offer it to guests. I've still got a few bottles left, but I'm planning on making a second batch with basically the same recipe. Super pale straw color, thin to non-existent head (odd for a wheat...), effervescent carbonation. Light lemony flavors, some wheaty undertones, generally just a light, crisp beer. Goes well with food, even cheese and crackers. Refreshing and palate-cleansing.
