Mac and Jack's African Amber Clone

Made several times, always comes out good. I believe the recipe originated in an old issue of BYO magazine. Still looking for a better match to the original, always open for suggestions.

Ingredients (All Grain, 5 gal)
- 9 lbs
English 2-row Pale
English 2-row Pale
All English Ales. Workhorse of British Brewing. Infusion Mash.
- 0.5 lbs
Crystal Malt 80°L
Crystal Malt 80°L
Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

Belgian Cara-Pils

Significantly increases foam/head retention and body of the beer.

Belgian Caramunich
Caramel, full flavor, copper color. For Belgian ales, German smoked and bocks.

Centennial - 10.0 AA% whole; boiled 60 min
Centennial
Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

Cascade - 5.5 AA% whole; boiled 15 min

Spicy with citrus notes. Slightly grapefruity.

From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.

Mac and Jack's African Amber Clone - (Similiar but still not as good as the original) 5 Gallon Batch: English 2-row pale: alternates-> British Pale, Marris Otter Pale 7.5 AAU Centennial Hops - Boil 60 Minutes ("X" AAU = ("X" Oz.) x (% Alpha) 6.2 AAU Cascade Hops - Boil 2 Minutes 4.2 AAU Cascade Pellet Hops - Dry Hopping 5-7 days before bottling) Cool wort to 70 degrees F. Pitch (1) Yeast Wyeast 1098 Smack Pack (Alternate: White Labs WLP005) Ferment for 10 to 14 days. (Primary 7-10 days, secondary 4-7 days) 0.75 cup (approx 6 oz.) Corn Sugar for carbonation/bottling. Color is significantly darker than the Beertools estimate of color.

I've made this beer alot, and I accidently stumbled upon the missing piece. I added about an ounce of sweet dried orange peels at 30 min. I had some left over from a belgian I made. Try it it's almost exactly what is missing when you make the byo recipe.

I forgot to post this before, the 1 ounce add of sweet dried orange peel is for a 10 gallon batch. for a 5 gallon batch, it would of course be 1/2 ounce.
Using extract and steeped grains

I would like to do a version of this recipe using malt extract and steeped grains. Any suggestions on how I could do this?
