starting gravity pooped out at 1.040 for some reason. great chamomile scent!! 1.030 after 3 days at 60 ish to subdue the banana esters...none evident. lot's of spicy phenol character though

checked at 11 days tastes good and SG 1.010 still a huge head and working. start about 65 next time instead of 60 deg.
all i have to say is WOW!!

i think i have created a hoegarden clone by mistake although a tad darker. after a terribly slow fermentation, 2 weeks, this beer is absolutly wonderfull. great head, medium body, light thirst quencher. hazy and slightly phenolic. not to much orange character and i detect a bit of wierd bitterness i am attributing to the dried orange peel from the brew store. never noticed it b4 but have read about it. i think i only notice it now because it's such a pale simple beer. will use fresh gratings next time. the chamomile adds a wonderfull nose and spicy flavor. can't detect the paradise or cardomon in particular but i will leave the dosage the same next time. f.g 1.009 at serving temp. problly about 1.008 actual will be updating this batch soon!
