single infusion mash at 154F for 90mins. Sparge to collect a total of 7.5 gallons. Pitch yeast at 75F. When yeast shows signs of activity move to fermentation temp. Ferment at 45-50 until done. Took me about 3 weeks. Move primary to warm spot and let beer rise to above 60F for 24hrs. Rack to secondary and store at 34F for at least 4 weeks. Can move to keg to condition after 1 week or so, once the majority of the yeast settles out. Just need about 4 weeks lagering time.
