White Labs WLP800 Pilsner Lager
Classic pilsner strain from the premier pilsner producer in the Czech Republic. Somewhat dry with a malty finish, this yeast is best suited for European pilsner production.
Notes
Single step mash at 150 degrees for 90 minutes. Sparge with 10 gallons @ 170 degrees. Slighly more hops than target, but I like hops. Pitch yeast at 62 degrees When bubbling begins (after one day) refrigerate to 50 degrees for 14 days (or until 88% fermented) Diacetyl rest - 68 degrees for 72 hours; then 1-2 days at 50 degrees. Then rack to secondary and begin lagering down in 5 degree increments daily until 38 degrees. Maintain 38 degrees for 4 weeks.

So far so good.

The brew is currently lagering at 38 degrees for another 3 weeks. The original and final gravities were both almost exactly as planned ... the color looks marvelous ... and it tastes great.
