Ingredients (All Grain10 gal)

  • 17 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 1/2 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • 1 lbs German Light Crystal

    German Light Crystal

  • 1.5 oz Northern Brewer - 7.2 AA% pellets; boiled 60 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1 oz Willamette - 5.2 AA% pellets; boiled 15 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • 1 oz East Kent Goldings - 5.8 AA% pellets; boiled 2 min

  • Wyeast 1768-PC English Special Bitter

    Wyeast 1768-PC English Special Bitter

    A great yeast for malt predominate ales. Produces light fruit and ethanol aromas along with soft, nutty flavors. Exhibits a mild malt profile with a neutral finish. Bright beers are easily achieved without any filtration. It is similar to our 1968 London ESB Ale but slightly less flocculent.

Notes

Add 4.5 gallons of 135 degree strike water to the grains for a protein rest at 122 deg. for 30 minutes, stirring at intervals of 4 minutes. Raise temperature to 158 deg. with 170 deg. strike water. Add Crystal and Carapils malt and mash until conversion is complete. Test after 30 min. Sparge with 170 deg. strike water until you have 11 gal. of wort in your boiling kettle. Bring wort to a boil then add the Northern Brewer's hops. After 45 min., add the Willamette hops. After 15 min., add the Irish moss. After 13 min., add the Kent Goldings hops. After 2 minutes, turn off heat and let wort steep for 10 minutes.
