Following a recipe in 'Brew your own real ale at hom' by Wheeler and Protz. IBU's seem very high, but are given as 38 in the book. This seems more realistic than 65!

  • 7 kg Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 0.61 kg British Dark Crystal

    British Dark Crystal

    Sweet caramel flavor, mouthfeel. For porters, stouts, old ales and any dark ale.

  • 0.12 kg English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • 126 g Fuggle - 4.8 AA% whole; boiled 90 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 56 g Goldings - 5.0 AA% whole; boiled 90 min

    Goldings

    Mild. Slightly flowery.

  • 28 g Goldings - 5.0 AA% whole; boiled 15 min

  • Wyeast 1187 Ringwood Ale™

    Wyeast 1187 Ringwood Ale™

    Notorious Yeast of European origin with unique fermentation and flavor charateristics. Distinct fruit ester and high flocculation provide a malty complex profile, which clears well. Thorough diacetyl rest is recommended after fermentation is complete.
