Robust top cropping yeast with phenolic character. Alcohol tolerance to 12%. Ideal for Biere de Garde. Ferments dry with rich ester profile and malty palate.
Notes
Single infusion mash at 150 until converted. Mash out at 169 F through direct heat. 90 minute boil. Feed sugar incrementaly: 1.125 # post primary, 1# post secondary with dry lager yeast. Ferment at 70F. and let rise to 74F. Cold condition post secondary fermentation at 42 for 2 weeks. Tertiary ferment at 75 for a wee. Lager for 4 weeks at 38F.
