Ingredients (All Grain5.5 gal)

  • 8 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 2 lbs Dark Brown Sugar

    Dark Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 1 oz Cascade - 5.5 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • Danstar Nottingham

    Danstar Nottingham

    The Nottingham strain was selected for its highly flocculant & relatively full attenuation properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop. The recommended fermentation temperature range of this strain is 14° to 21°C (57° to 70°F) with good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer. With a relatively high alcohol tolerance, Nottingham is a great choice for creation of higher-alcohol specialty beers!

Notes

mash 2 can of pumkin grain brown suger in4 gal of 155 water with 1/4 tsp of amylase enzyme for 60 min then recirc for 15 mins and sparge with4.5 gals of 175 water for 45 mins add 1 tsp nutmeg ,allspce and dri ginger and 4 tsp cinnamon with 5 mins to go whilflock with 15 mins and 1 tbs of vanilla at end of boil

the ale is going very well temp at fermention is 63-67 deg pumkin color and good the gravity is 1.010 will second let you know ( this is the second year I brewed this beer ) every one is waiting on this one

i now have brewed this four times . changing this up for my fall weeding , higher og and smoking some pumpkin will store one year in bottles
