Ingredients (All Grain10 gal)

  • 15 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 2 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • 0.5 lbs Midwest Wheat Malt

    Midwest Wheat Malt

    Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

  • 3 lbs Rice Raw

    Rice Raw

    Lightens flavor without taste. Use in American and Asian lagers.

  • 1.5 oz Hallertauer Hersbrucker - 3.8 AA% pellets; boiled 75 min

    Mild to strong. 'Noble'.

  • 1 oz Saaz - 3.2 AA% pellets; boiled 1 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • White Labs WLP051 California Ale V

    White Labs WLP051 California Ale V

    From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.

Notes

Crush the rice and cook it slowly for 20 minutes and add to mash, however be careful as the rice will get thick while you are cooking it, so ensure that you keep it wet enough so that it does not dry out. I found 1 1/2 gallons of water to be a pretty good start. Mash the grain and rice together at 150-152F for 60-90 minutes, sparge with 165-170F water. Keep the lauter tun wet, as stuck sparge is easy to come by.

I brewed this beer about 6 weeks ago. It was great and I am planning on brewing it again.
