White Labs WLP051 California Ale V
White Labs WLP051 California Ale V
From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.
Notes
Nice, creamy head with some great lacing. Full bodied and still a bit sweet in the finish, but still crisp. Color is much akin to honey. See BrewBlog entry at http://brewlog.zkdigital.com/index.php?page=brewBlogDetail&id=55

Discussion
Pretty good...but could be better.

I've brewed this twice. The extract version the first time and the all-grain version this time. The sweet finish mellows a bit when it reaches maturity and the hops, even though at the top of the bitterness scale, are not over-powering. This one may be OK without the honey. I'll probably omit it next time to see what the affect on the overall taste is.
