Highly flocculant top-fermenting strain with rich, malty character and balanced fruitiness. This strain is so flocculant that additional aeration and agitation is needed. An excellent strain for cask-conditioned ales.
Notes
Age for 6 months in oak chips (heavy toast). Soak oak chips in Jameson's irish whisky for one month before adding to carboy. Step mash from 130 up to 155 F. boil Moxie for 60 min, cherries & dark chocolate for 15 min.
