Ingredients (All Grain10 gal)

  • 12 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 5 lbs American Munich

    American Munich

    Munich Dunkels. Adds color/nutty flavor. Sometimes called Aromatic.

  • 2 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 2 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 1 oz Magnum - 14.5 AA% whole; boiled 60 min

    Magnum

    Bred in 1980 at Germany’s Hüll Hop Research Center, this high-alpha variety is renowned for its exceptionally large, heavy cones. Hallertauer Magnum delivers excellent yields and, like many Hüll-developed hops, boasts a strong resistance to disease.

  • 1 oz Cascade - 8.0 AA% whole; boiled 30 min

    Spicy with citrus notes. Slightly grapefruity.

  • .72 oz Tettnanger - 5.8 AA% whole; boiled 1 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • .75 oz Willamette - 5.6 AA% whole; boiled 30 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • .5 oz Cascade - 8.0 AA% whole; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 tsp Gypsum - (omitted from calculations)

  • 1 tbsp Irish Moss - (omitted from calculations)

  • Wyeast 1028 London Ale™

    Wyeast 1028 London Ale™

    Rich with a dry finish, minerally profile, bold and crisp, with some fruitiness.

Notes

Mash 6.5 Gal @ 150F Water. Sparge 9 Gal 175-180F Water. First Wort Hop (1/3 Bittering hops in sparge runoff). Boil 90 Min, Hop Schedule as Below. Chill, Aerate and Pitch. Raise a glass in blessing to the new bride and groom.

OK I have started this one

My Buddy's daughter is getting married Jun 20th and he wanted a wedding brew. We put this one in the carboy yesterday (actually 2 carboys). Our OG was almost 10 points higher than predicted(not sure how that happened as we endded up with about 11 gallons of wort). Will post again as the process goes along. -James-
