Capitol City Saison

Wife and I visited Capitol City Brewery in DC on a getaway trip and they had a Saison on tap (Seasonal). It was incredible! I later emailed them and the head brewer gave me ALL of the recipe's specifics!

Ingredients (All Grain, 5 gal)
- 12 lbs
Belgian Pils
Belgian Pils
Pilsner style malted barley grain.
- 2 lbs
White Wheat Malt
White Wheat Malt
Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.
- 1 oz
East Kent Goldings - 5.0 AA% pellets; boiled 60 min

Mild, slightly flowery.
- 1 oz
Styrian Goldings - 6.0 AA% pellets; boiled 15 min

Mild, pleasant.
- 1 oz

White Labs WLP565 Belgian Saison I
Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.

The brewmaster at Cap City Brewery said that this was fermented at 78 degrees and that it may take a couple weeks for it to finish as this yeast can be slow. He said be patient! This was a single infusion mash at 147 degrees. It was boiled for 90 minutes for culling extra color and bittering hops were not added until 60 minutes (to go) mark. JunoBrewer~
