American IPA • All Grain • 5.5 gal

Really bitter; but smooth bitterness due to late kettle additions. Ended up dry hoping with fresh Cascade and with pellet Amarillo and the aroma is wonderful. We';; give it until December in the bottle before we start drinking to mellow out the bitterness a bit.

  • 11 lbs Golden Promise Pale

    Golden Promise Pale

  • 2.5 lbs Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • .5 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • .5 lbs Light Brown Sugar

    Light Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 5 oz Cascade - 5.5 AA% whole; boiled 20 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • .75 oz Liberty - 4.7 AA% whole; boiled 90 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • 1.5 oz Amarillo® - 8.3 AA% pellets; boiled 45 min

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • Wyeast 1968 London ESB Ale™

    Wyeast 1968 London ESB Ale™

    Highly flocculant top-fermenting strain with rich, malty character and balanced fruitiness. This strain is so flocculant that additional aeration and agitation is needed. An excellent strain for cask-conditioned ales.

Notes

Single infusion mash at 153 until converted. 3 oz. of cascade hops in mash. Mash out at 169 F through direct heat. 90 minute boil. Multiply all hop additions by 6 for Fresh Hops. First Wort Hop with .75 oz. Liberty hops. Add 2.5 oz. cascade and 1/4 oz. amarillo at 10 minutes. Add 2.5 oz. cascade and 1/4 oz. amarillo at knock out. Aerate for 15 minutes. Pitch 2 smack packs of yeast. Ferment at 67 F. Dry Hop 7 days with 3 oz. Cascade hops.
