My version of a Belgian farmhouse ale.

Ingredients (All Grain, 5.5 gal)

Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Pilsner style malted barley grain.

Belgian White Ale(wit), other specialty beers.

Honey
Honey
Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.
- 2 oz
Spalt Spalter - 4.8 AA% pellets; boiled 60 min

Mild, slightly spicy. 'Noble'.

Saaz - 5.0 AA% whole; boiled 5 min
Saaz
Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.
Notes
Single infusion mash @ 150 for 90 min. Add honey at last 5 min of boil. Left outside w/ cheesecloth over bucket overnight (daring, I know). Pollen-like substance discovered floating on top in the morning along with some strange seed-like things.

You should have seen all the nasty crud floating on the top of this when I went to rack off. I had to scoop it all out with a strainer. I was almost afraid to taste it, but it was incredible! Very true to form. It's also clearifing really well.
