Iron Mike's Brewery: This is a family favorite. It's scaled to serve in (2) 3-gal corneys. Add strawberry extract (to taste) to one corney for one regular Kolsch and one superb Strawberry Kolsch. Let me know if you like it.

Ingredients (Partial Mash6 gal)

  • 3.6 lbs Belgian Pils

    Pilsner style malted barley grain.

  • 1.2 lbs German Wheat Malt Light

    Reportedly lightest colored malt extract available.

  • 1.25 oz Tettnanger - 5.5 AA% whole; boiled 60 min

The secret is to take 1 lb of Belgian (not German)Pilsner malt and toast on a cookie sheet in a 350 degree oven until it just starts to "smell toasted." I use single infusion mash, but steeping crushed grains is probably sufficient. White Labs Kolsch yeast is a must! Ferment and keg as usual. I always use 3/4 cup corn sugar per 6 gallons to prime--even with kegs. It comes out much better than force carbonating. Give it two weeks at room temperature and then chill as close to freezing as possible. Very Important: Cold condition for 30 days before serving! You will fall in love with this recipe and so will your guests.
