Spice, Herb, or Vegetable Beer • All Grain • 5 gal
My version of a 15th century strong herbal ale. Supposed to taste like Moxie (which I love). I'm brewing this one next weekend. Should be interesting, I'll keep you posted.

Ingredients (All Grain, 5 gal)
- 5.5 lbs
English 2-row Pils

Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

Light flavor, creamy head. For wheat beers, stouts, doppelbocks and alt beers.

Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

Unique top-fermenting yeast which produces the unique and spicy weizen character, rich with clove, vanilla and banana. Best results are achieved when fermentations are held around 68F.
Notes
also add 1 Tbsp of Fennel Seed (didn't fit in the recipe calculator) Mash-in at 148F for 2 hours. Sparge with 170F water. Add hops & herbs, then boil 60 minutes.

I just took the gravity & drank the sample. I can't believe I am tasting what I'm tasting. Very foresty tasting with a smooth dark maltiness in the background. Medicinal in an understatement! I am really digging this flavor. Gonna have to make this again, I believe.
