Ingredients (Extract6 gal)

  • 1/3 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1/3 lbs Belgian Special B

    Belgian Special B

  • 4 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 3.3 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 oz Styrian Goldings - 4.0 AA% pellets; boiled 60 min

    Styrian Goldings

    Mild, pleasant.

  • 1/2 oz Cascade - 5.4 AA% pellets; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1/2 oz Liberty - 3.5 AA% pellets; boiled 5 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Yeast starter done with 1/3c. corn sugar and 700 mL water @ 66F. for 48 hrs. Add converted grains at 45 min. Primary at 64-66F. for 4 weeks, secondary at same for 3 weeks. Corn sugar primer.

One of the best yet.

Well, a years gone by... This turned out to be one of my top 3 brews. It cellared nicely, and drank nicely too. It was good when it was new, and just got better. Damn tasty. Flavors remained well balanced, fine carbonation with a lasting creamy head, good mouthfeel, with very little alcohol bite. Half of this batch was saved for the holidays and it went fast, with calls for more.
