XXX All-grain
Belgian Pale Ale • All Grain • 10 gal
My first all grain batch. I am beginning the brew in a few minutes. Will update when I know more. This beer took third in my homebrew club Belgian category. I will be making it again.

Ingredients (All Grain, 10 gal)
- 21.08 lbs
English 2-row Pils
English 2-row Pils
Pilsner base malt.
- 1.13 lbs
Crystal Malt 40°L
Crystal Malt 40°L
Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.
- 0.45 lbs
Honey Malt
Honey Malt
Nutty honey flavor. For brown ales, Belgian wheats, bocks and many other styles.
- 1 oz
Chinook - 13.0 AA% pellets; boiled 60 min
Chinook
Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.
- 1 oz
Cascade - 5.5 AA% pellets; boiled 15 min

Spicy with citrus notes. Slightly grapefruity.

Saisons, Belgian Ales, Belgian Reds, Belgian Browns, and White beers are just a few of the classic Belgian beer styles that can be created with this yeast strain. Phenolic and spicy flavors dominate the profile, with less fruitiness then WLP500.
Notes
I fermented it all in a demi-john. I then split it into two batches. Fermented the one alone and the other with 5 lbs of dried apricot puree. This made it like Fat Tire. I primed with corn sugar. I just tasted one after two weeks in the bottle and with a little more time to condition it will have carbonated well. great flavor! Very Belgian. The two beers side by side are totally different. I think the dried apricots halted the fermentation in the secondary. They both are veryy drinkable.
