Brewed this one yesterday. Am aiming for JW Dundee's Pale Ale meets Saranac Pale Ale.

Ingredients (All Grain5 gal)

  • 7.63 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 2.80 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 0.11 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 0.11 lbs Belgian Biscuit

    Belgian Biscuit

    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

  • .125 lbs American Victory

    American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • 0.5 oz Chinook - 13.5 AA% whole; boiled 60 min

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 0.5 oz Amarillo® - 8.0 AA% pellets; boiled 15 min

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 0.50 oz Cascade - 5.0 AA% whole; boiled 1 min

    Spicy with citrus notes. Slightly grapefruity.

Transfered to the secondary where it will sit for two week before bottling. There was a lot of sediment in the bottom of the carboy. The color appears to be right on target.

OK folks. This one is a keeper. It starts out bold and ends with great flavor. You won't be sorry that you made it trust me.
