  • 16 lbs English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 6 lbs Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • 1 lbs Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • .5 lbs Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 2 lbs Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • 2 oz East Kent Goldings - 5.0 AA% whole; boiled 60 min

    Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.

Notes

Parti-gyle team operation. Scoth Ale: Draw one gallon and reduce to 1/3. Continue first runnings till 5 additional gals is reached. Total @ 4-4.5 gal. Scottish Ale ?/- Second runnings pulled till 5.5 gallons is pulled or sg drops below 1.010. Steep .5# Aromatic and .5# of Crystal Malt for 30 Min 1 oz of EKG at (60) Pitch health WL028 ferment in the mid 50s.
