Ingredients (All Grain5 gal)

  • 12 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1 oz Nugget - 8.0 AA% whole; boiled 60 min

    Nugget

    This is very bitter and often used in medium to dark ales and lagers. Aroma is quite heavy and herbal.

  • 1 oz Cascade - 5.5 AA% pellets; boiled 10 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

-Mashed at 148F -Boiled 90 min: -1 oz home grown Nugget and Mt. Hood hops (whole) for 80 min -1 oz Amarillo hops (pellet) for 10 min. -Cooled to 70F; pitched 750ml starter of rehydrated Safale US-56 yeast. -Forgot to take SG :( -FG = 1.006

Dry hops

Planned on dry-hoping, but after tasting while transfering to 2ndary, decided not to; TONNES of hop aroma as is. Three cheers for Amarillo! Hip, Hip... Safale US-56 dry yeast is AWESOME! A very healthy cake sat on top of the primary ferment for days! Clean and dry; no trace of esters.

Wow, considering I threw this together without much thought, it turned out amazing! Safale US-52 yeast fermented it quite dry, and the Amarillo hops were the perfect choice. Aged nicely. Think I'll try some oak chips in the next batch's secondary fermenter.
